It is the only site in the village with a significant amount of chalk (shell limestone) in the soil. The resulting wine is mineral driven and racy, with aromas of ripe yellow peach and Mirabelle plum followed by flavors of lemon, pink grapefruit and a haunting smokiness from the chalk. At its best with fresh seafood, green salads and Swiss cheeses.
