A no fuss, roasting joint that is easy to carve with no waste. Brush the skin with olive oil, then roast in a preheated 200C (fan 180C) oven for 1 hour under foil. Finish uncovered for 30 40 minutes until juices run clear. The internal temperature should be above 80. Rest
