The juiciness and the purity of ripe pear flesh become apparent against a background that owes as much to phenolic texture as to concentrated freshness. These elements are well placed to counter the alcoholic warmth. This is rather powerful but also very well balanced with a dry and sustained finish. Lovely now but with the stuffing to evolve.
