It is produced on Marina Colonna's estate in the Molise region, employing methods strongly influenced by the organic movement, relying on natural fertilisers and ecologically sustainable agriculture. The olives of selected varieties, each typical of the area are harvested by hand and cold pressed on the estate within twenty four hours of picking.
