Archivio - Peccorino Spice Gin The estate belonged to theFine Wine from Our Bottle Shop and Taproom: The little known Pecorino grape (not the cheese!) is indigenous to the central wine regions of Italy. Archivio comes from Chieti in the Marches. It is a pale skinned and grows well at altitude, up to 1000m hardy and resilient in cool temperatures. Traditional vinification employing a reduction technique is used in the making of this wine. There is an initial pressing, then four hours maceration followed by a
