Grass fed and grain finished. Sitting just above the tenderloin, sirlon is a lesser exercised muscle with more marbling, resulting in an incredibly buttery rich flavor and tender texture. We reccomend cooking it at high heat on a skillet or grill, aiming for a crusty exterior and a medium rare interior. This cut is already so flavorful
