Made from two vintage cuves of Beni Satsuma sweet potato shochu fermented in traditional terracotta jars before distillation, this super premium spirit is produced using ancient Japanese techniques of multiple parallel fermentations, coupled with vacuum distillation at low pressure below 100C. The distillery, founded in
