Restless River Vineyard Selection Pinot Noir 2023 Bushmills Drawn from Glen Scotia's rareGrapes for the Restless River Pinot Noir were sourced from newer vineyards, planted between 2017 and 2020, situated in the Upper Hemel en Aarde Valley. Grapes were destemmed and underwent whole berry fermentation in open top fermenters with spontaneous fermentation. A combination of gentle pump overs and punch downs was employed to extract flavour.
