Brooklyn Kura "Catskills" Junmai Daiginjo Nama Chozo Limited Release Sake 750ml women-winemaker Following a manual harvest ofThis is Brooklyn Kura's second Dai Ginjo, named after the Catskill Mountains which is the source of their water. Dai Ginjo is considered a super premium style of sake due to the effort, time, and cost that goes into its production. They use 100% sake brewers rice (yamada nishiki), a single modern yeast, and don't let the fermentation go above 11 degrees celsius. The result is intended to be delicate and luxurious. Light bodied, delicate on the palate
