End grain is a lot harder than top grain, so this makes a better cutting board because the end of the board is three times harder than the top or sides of a board so this is the end of boards turned upward. Even after cutting on this board for say 5 years you would just have scratches and no deep gauges, plus it will not splinter when you cut on
