Though Mexican, we first discovered the magic of Al Pastor while travelling through Guanacaste, Costa Rica. Our recipe boasts charred Costa Rican pineapples, as well as Costa Rican achiote, perfectly complimented by Mexicos famous smoked ancho, chipotle and habanero peppers, and fermented cayenne.
