Highland Liquor Co - Seven Crofts Dry Gin France chipotle peppersSeven Crofts Gin was launched in 2019 by The Highland Liquor Co, based in Ullapool on the shores of Loch Broom in the Scottish Highlands. Now home to 1,500 people, the village of Ullapool was established in the late 1700s as a fishing village and originally consisted of seven dwellings, and the Seven Crofts name pays homage to this. Founders Robert Hicks and Helen Chalmers began planning The Highland Liquor Co in 2014 and tested 96 combinations to
